Fat free cookin' for lean-mean preachin' machines!



I have learned over the years of ministry that a "fat style" of cooking makes a preacher "plump." And you know what they do with "plump" things: stuff 'em, pluck 'em and carve 'em ;}
The truth is - and we all know it - that fat is not a friend to the man of God. It clogs his arteries; it crowds his heart; it diminishes his lungs; it makes him sluggish (or can he really blame that on fat?) and is the "culprit" in many of the other maladies that ruin his body.
The purpose of this page is (hopefully) to provide you with delicious and wholesome "fat free" or "low fat" cooking suggestions.
"YUK", I can hear you say. "That's the last thing I want from a religious page!"
But it's really not that bad. These cooking methods, spices and techniques will absolutely astound you. Some of the ideas will be mine or my wife's. Some will be from sources that I will cite. Try a few and see if you don't agree with me that food CAN taste good without all the fat.
If you have read to this point, I want you to know that I am not a health-nut-nutritionist-radical-"anti-fat" person. I have to fight against the "fat attack" too!
So, read on, my brave friend-what you find here may be the most valuable information on my entire site---to you.





Go to a bookstore and buy a book titled "BUTTER BUSTERS." It will be the best investment you'll make toward learning how to prepare "fat-free" food.

Also, get a great book called "FROZEN ASSETS" written by Deborah Taylor-Hough.
It's full of wonderful time and money saver ideas.
Amazon has it now - Barnes and Noble will have it in December.

Cooking hint: One of the best low-fat cooking tools we have found is the George Foreman Grill. It's quick and easy.... wonderful for chicken, low fat cheese sandwiches, and scads of other things. We absolutely love ours. (About 60 bucks.)




BASIC LOW-FAT INFORMATION
MEATS
Use red meat sparingly. Buy the lowest fat content (costs a little more, usually) and bake, broil, grill, saute, or use the Foreman grill. Eat smaller portions.
VEGGIES
Eat all you want! What a wonderful gift! Use in: salads, low-fat dips, steamed, sauted, or raw. Don't underestimate the value and filling power of vegetables.
DESSERTS


Fats and sugar are the main ingredients in most desserts. You must be aware of this! Desserts are the downfall of most people who try to lose weight. Be strong! Be brave!! Don't let your "sweet tooth" control your life. I know it's easy for me to say ... but you REALLY can beat the dessert game. It takes planning, effort and a strong will. (You have all of those traits, don't you?) Many different kinds of prepared low-fat desserts are available - just watch out for the calorie count. They seem to pump the sugar in to replace the fat.
BREADS AND GRAINS

Wheat/grain breads are preferred just watch the fat content. NO "regular type"cornbread; NO croissants; NO pastries -- You get the picture!
Most regular type bread only has 1.5 fat gram per slice. The problem comes when the bread is covered with butter or other high fat spreads. Remember, a tablespoon of butter has about 17 grams of fat, mostly bad. (Sorry - good old-fashioned southern type bisquits are only a memory if you want to lose weight.)
Dont forget to include pasta in your food program. (Just be careful about what you put on it.)
Beans and legumes are needed to help fill out the bread/grain requirement. You can eat lots of these and if you have problems with flatulence use Beano. It really does work!!
SOUPS
Happily, soups can be one of the best low-fat foods. Be sensible - don't add the bad stuff! The variety is almost limitless. (Warning! - - You will learn to hate soup if you over use it in your weight loss plan.) Learn to use substitute ingredients to avoid the fat. Soups and Stews
SEAFOOD



The wonderful salmon is the pride of the great Northwest. I love it! I cook fillets and steaks in my hot air cooker and they are perfectly done in about 20 minutes. Salmon has higher fat than many other fish but it's good fat. Most seafood is low-fat. The preparation is what can ruin the low-fat benefits. Do not use butter, creams, sauces, etc. which have a high-fat content. You can bake, broil, saute in Butter Buds, or use the Foreman Grill to achieve wonderful results with seafood.
POULTRY

Say this out loud: "Fried chicken is not on my menu anymore!" There are dozens of other ways to fix poultry which are delicious and nutricious. You can bake it, grill it, saute it, bar-b-que it, roast it, pressure cook it ... and the list goes on. Just remember to remove the skin before you eat the chicken. (UGH! Who wants to eat skin anyway. Right?)
EGGS AND DAIRY


If you're a "country boy" it's hard to give up whole milk, fried eggs, bacon and buttered toast. I especially miss "white milk, bacon fat gravy." But ... if you want a healthier life, wave bye-bye to all of those high fat foods. Egg Beaters taste great - skim milk has NO fat - take your toast dry - skip the gravy - and for sure .... let the pig live on!
FRUITS
If you are fortunate enough to live in an area where you can get an abundant supply of fresh fruit, you are a very blessed person. I envy you !! (In a Christian way, of course.)I used to live in central California where fruits and vegetables were abundant and inexpensive. Oh, how I miss that blessing. Buy fruit even if it does cost more than you want to pay. It is a precious gift to your body. Eat as much as your system will allow.
SALADS

Green salads and fruit salads are wonderful extras to the low-fat regimen. You can easily make a non-fat dressing by mixing non-fat mayo or non-fat sour cream to any commercial non-fat bottled dressing. The mayo or sour cream knocks the weird taste which is in most bottled non-fat dressings. It really does work. Try it until you find the "right" combination for your taste.

Be sure to include a good variety of green, red, yellow, etc. vegetables in your diet. They are good for you and they look fantastic on your plate.
Spices and Herbs
Get Cavendar's Greek Seasoning. It's Fantastic! My favorite for beef.

Rather than trying to list a lot of recipes, I am adding links to cooking sites. Just remember that you have to faithfully remove the high-fat content. Be aware that some recipes will not turn out right without the high-fat oils. You can resolve that problem real easily - DON'T USE THEM! Most recipes can be altered without suffering.
